Refreshing Summer Cucumber Tomato Salad

Want an easy healthy hydrating side for the summer to keep up your energy levels and get in some extra electrolytes and water? The salad will help add additional nutrition to your diet while filling you up.

Despite the weather starting to cool and the fall season approaching tomatoes and cucumbers are still growing their last rounds for the season. I wanted to share a recipe with you to enjoy those last few bites of refreshing summer before we snuggle into cozy fall. This recipe has been a part of my summer meals since birth but now as an adult with years of cooking experience, I have tweaked the recipe to a version more befitting my tastes packed with even more flavor.


*I will just forewarn everyone trying out this recipe that most of my recipes reside in my head and this is the first time they are being written down so, while I wrote this recipe closest to what I make, the likelihood that they will need to be adjusted is very possible since, I cook with my heart and not a measuring cup most days!


Refreshing Cucumber Tomato Salad

Cucumber Tomato Salad

  • 1 Cucumber Sliced into bite-sized pieces (1/4ths)

  • 1 Large Tomato (equal parts cucumber to tomatoes)

  • ¼ Chopped Red Onion

  • 2 Tbsp Balsamic 

  • 2 Tbsp Olive Oil

  • 1 Tsp Garlic Powder

  • ½ Tsp Salt

  • ¼ Tsp Black Pepper

  • 1 Tsp Onion Powder (Optional)

  • 1 Tsp Parsley (Optional)

  • ¼-½ Cup Feta (Optional)


Directions

  1. Cut Cucumber and tomato into bite-sized pieces and place in a medium-sized bowl

  2. Slice or chop an onion and add to a bowl

  3. Add into the bowl the rest of the ingredients

  4. Stir to combine

  5. Adjust seasoning and additional ingredients to taste

  6. Enjoy!


I hope you enjoy this recipe as much as I do! It's been a staple during the summer months when we have cucumber and tomato overflowing our kitchen from the gardens and we’re looking for that added hydrating veggie side or snack!
